This is super easy and – we all agreed – deeelish!
Ingredients
- Trader Joe’s Mirepoux (if you don’t have this, you can sub 1 cup onion, one cup celery, and use a full pound of chopped carrots)
- 3/4 lbs chipped carrots (in addition to what is in the mirepoux)
- A heaping tablespoon of grated ginger (I like the jar of fresh grated; saves time rather than grating it yourself)
- 1/4 cup miso paste
- 1 teaspoon herbs de Provence (can sub dried thyme, rosemary, or sage)
- 1/2 can coconut milk
Directions
- Sauté the onion in oil until translucent
- Add the celery and cook 5 minutes
- Add the chopped carrots, ginger, and herbs
- Stir in enough water to cover the carrot mixture by one inch
- Add miso paste and stir to dissolve once the water has heated up
- Cover and simmer until the carrots are soft, about 30 minutes
- Use an immersion blender to purée the mixture
- Stir in the coconut milk and ground black pepper to taste
