Savory Oatmeal Cheddar Muffins

These are the savory companion to the previous muffin recipe I posted.  Once again, I am eating the whole batch…

Ingredients:
– 1 cup rolled oats
– 3/4 cup flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 2 eggs
– 1/2 cup plain yogurt
– 1/2 cup – 1 cup milk
– 3 green onion stalks, finely sliced
– 1 cup grated sharp cheddar cheese
– 1 or so teaspoons cracked black pepper
– 1/3 cup chopped green olives

Steps:
1.  Combine everything in a mixing bowl.
2.  Add the milk last.  Add enough to make a fairly wet batter.
3.  Pour batter into pre-greased mini-muffin tins (this recipe makes about 2 dozen mini-muffins)
4.  Bake at 350 degrees for 30 minutes or until a fork comes out clean.

I think these would go really well with a glass of V-8 or a salad or a cup of gazpacho.  Yum!
