Scrumptious Mushroom Pate

I had some crimini mushrooms that were hunkering to be elevated into something divine, so this happened.

Ingredients:
– 8oz crimini mushrooms
– 2 green onion stalks
– 1 clove garlic
– 2 tablespoons cream cheese
– 1 tablespoon chevre cheese
– 1 tablespoon butter
– pinch of sage and/or thyme
– salt and pepper

Steps:
1. Put the mushrooms, green onion and garlic into a food processor and process until roughly chopped.
2. Saute the mushroom mixture in a frying pan with a little oil until it smells delicious and is cooked through (about 5 minutes).
3. Stir in the herbs and pepper and cook for one more minute.  Add a little salt if you want, but remember that the cheeses will add salt, so you may want to hold off.
4. Put the mushroom mixture back into the food processor and add the cheeses and butter.  Process until smooth.  Adjust salt if necessary.
5. Scoop into a bowl and place in the refrigerator to cool.

This is delicious on any kind of bread or crackers!  I bet you could mix it into eggs, too, for a yummy omelette.  Feel free to post other ideas too!  Yum!

Super Quick Lentil Salad

This is a Trader Joe’s recipe that takes about 5 minutes to make and is a complete crowd pleaser.  Makes a great snack with a side of pita chips or serve a scoop on top of a salad.

Ingredients:
– 1 package TJ’s pre-cooked lentils
– 1/2 cup chopped basil
– 1 container TJ’s bruschetta sauce (in refrigerated section)
– 1 container TJ’s crumbled feta (4oz should do it)

Steps:
1. Mix everything together
2. Eat
