Cauliflower Curry Stew

Rafi came home from daycare one day and declared, “Mama, I tried a new kind of broccoli.  It’s called ‘flower’.”  I’ve been pretty into cauliflower recently, and here’s my latest mix.  This, as always, is super quick and delicious.

Ingredients:
One onion, chopped
5 cloves of garlic, minced
One tablespoon of minced ginger (I buy the jar, saves lots of time!)
One head of cauliflower, chopped into bite-sized pieces
One can of diced tomatoes
One can of garbanzo beans
A cup of fresh peas (frozen will work too)
A teaspoon of curry powder
A dash, to taste, of cinnamon, garam masala, cumin, soy sauce, salt and pepper

1.  Saute the onion until translucent

2.  Add the garlic, ginger, and cauliflower

3.  Add a half-cup of water, and cover and simmer for about 10 minutes

4.  Add the tomatoes, garbanzo beans, peas and spices

5.  Cover and simmer until the cauliflower is tender and the ingredients have melded

6.  Adjust spices and serve over rice (I used the Trader Joe’s Brown Rice medley.  It was really yummy with the stew!)
